Vegan Mayonnaise Recipe
Ingredients
Makes about 2 cups
- 1 (12-ounce) package silken tofu, drained
- 2 tablespoons apple cider vinegar
- 1 1/2 tablespoons Dijon mustard
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/8 teaspoon turmeric
- 1/8 teaspoon ground cayenne (optional)
Method
- In food processor or blender, combine all the ingredients and process until smooth and well combined
- Taste, adjusting seasonings if necessary
- Scrape the mayonnaise into a container with a tight-fitting lid, cover and refrigerate until needed
- Properly stored, it will keep for up to 5 days
