Vegan Aioli Recipe
Ingredients
Makes about 1 1/2 cups
- 1/2 cup slivered almonds
- 3 garlic cloves, crushed
- 1/3 cup water
- 1/2 teaspoon Dijon mustard
- 2 tablespoons fresh lemon juice
- 2 teaspoons agave nectar
- 1/2 teaspoon salt
- 1/8 teaspoon ground cayenne
- 1/3 cup olive oil
Method
- Place the almonds in a medium bowl
- Cover with water and soak overnight
- Drain the soaked almonds and transfer them to a blender
- Add the garlic, water, mustard, lemon juice, agave nectar, salt and cayenne and blend until smooth and creamy
- With the blender running, stream in the oil, blending until the mixture thickens
- Transfer to a medium bowl
- If not using right away, cover and refrigerate until needed
- Properly stored, the sauce will keep for 2 to 3 days
