Avocado Tzatziki Chicken Salad

Ingredients

  • 1 large ripe avocado
  • 2/3 cup 2% Greek yogurt
  • 1 cup grated cucumber
  • 1 tablespoon minced garlic
  • juice of 1/2 lemon
  • 1 tablespoon chopped fresh dill
  • 1/2 tablespoon olive oil
  • sea salt and black pepper
  • 16 ounces cooked chicken breast, shredded or chopped
  • garnish: coarsely ground black pepper, red pepper flakes (optional), fresh dill

Method

  1. Peel and pit the avocado and mash the flesh in a medium bowl
  2. Add the yogurt and mix together with a spatula
  3. Wrap the cucumber in cheesecloth or a paper towel and gently squeeze out most of the excess water, then add the cucumber to the bowl
  4. Add the garlic, lemon juice, dill, and olive oil to the bowl and mix together
  5. Season to taste with salt and pepper
  6. At this point you can store the tzatziki in an airtight jar and enjoy with pita bread or your favorite crunchy vegetables-or keep going to make the chicken salad!
  7. Fold the chicken (see note) into the tzatziki, garnish, and enjoy!
