Tex-Mex Black Bean And Walnut Dip And Spread Recipe

  • 1 tablespoon olive oil
  • 1/2 cup diced red onion
  • 1 cup raw walnuts
  • 1 cup chopped cilantro
  • 1 (15-ounce) can black beans, rinsed and drained
  • 3 tablespoons avocado oil or olive oil
  • juice of 1 lime
  • 2 teaspoons ground cumin
  • 1 garlic clove
  • 1/2 jalapeno (optional)
  • sea salt and black pepper
  • garnish: chopped fresh cilantro; lime wedges; red pepper flakes

Method

  1. To a nonstick skillet over medium heat, add the olive oil and onion
  2. Saute until the onions are browned and translucent, about 6 minutes
  3. Add the onions to a food processor or high-powered blender, then, one at a time, add the walnuts, cilantro, beans, avocado oil, lime juice, cumin, galic, jalapeno (if using), salt, and black pepper
  4. Blend until smooth
  5. Store in the refrigerator in an airtight container for up to 2 weeks
