Tex-Mex Black Bean And Walnut Dip And Spread Recipe
Ingredients

- 1 tablespoon olive oil
- 1/2 cup diced red onion
- 1 cup raw walnuts
- 1 cup chopped cilantro
- 1 (15-ounce) can black beans, rinsed and drained
- 3 tablespoons avocado oil or olive oil
- juice of 1 lime
- 2 teaspoons ground cumin
- 1 garlic clove
- 1/2 jalapeno (optional)
- sea salt and black pepper
- garnish: chopped fresh cilantro; lime wedges; red pepper flakes
Method
- To a nonstick skillet over medium heat, add the olive oil and onion
- Saute until the onions are browned and translucent, about 6 minutes
- Add the onions to a food processor or high-powered blender, then, one at a time, add the walnuts, cilantro, beans, avocado oil, lime juice, cumin, galic, jalapeno (if using), salt, and black pepper
- Blend until smooth
- Store in the refrigerator in an airtight container for up to 2 weeks
