Tamarind Sauce Recipe

Ingredients

Makes about 1¾ cups

  • 2 tablespoons tamarind paste
  • 1 cup warm water, plus or more if needed
  • 1/3 cup pitted dates
  • 1/3 cup sugar
  • 1 teaspoon salt
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon ground cayenne

Method

  1. In a blender or food processor, combine all the ingredients and process until smooth
  2. Taste, adjusting seasonings if necessary and add more water if needed for desired consistency
  3. Transfer to a small bowl
  4. If not using right away, cover and refrigerate until needed
  5. Properly stored, the sauce will keep for 2 to 3 days
