Taco Rice With Beans Recipe

Ingredients

  • Serving Size : 6
  • 2 cups water
  • 8 ounces tomato sauce
  • 1 package taco seasoning mix
  • 1 cup corn
  • 1/2 cup green pepper – chopped
  • 1/2 teaspoon oregano
  • 1/8 teaspoon garlic powder
  • 1 cup brown rice
  • 16 oz pinto beans, canned

Method

  1. In a medium saucepan, combine all ingredients, except rice and beans.
  2. Bring mixture to a boil over medium heat.
  3. Stir in rice and beans.
  4. When mixture boils again, stir, then reduce heat to medium-low, cover, and simmer until most of the liquid has cooked out, 45 minutes to 1 hour.
  5. Remove from heat, and set aside covered for 5 minutes.
  6. Mix well.
  7. Serving Ideas: sprinkle w/ fat-free Parmesan cheese
