Sweet And Sour Pumpkin Indian Recipe

Ingredients

  • recipe for : Khatta Meetha Kaddu
  • 2 teaspoons safflower or other neutral oil
  • 1 teaspoon mustard seeds
  • 1 teaspoon cumin seeds
  • 1/4 teaspoon fenugreek seeds
  • 5 cups diced peeled and seeded pumpkin or butternut squash 1 teaspoon ground coriander
  • 1 teaspoon Garam Masala
  • 1/2 to 3/4 teaspoon salt
  • 1/4 teaspoon ground turmeric
  • 1/4 to 1/2 teaspoon cayenne
  • 1 to 2 tablespoons sugar
  • 1 tablespoon dry mango powder or 2 teaspoons lemon juice 1/2 teaspoon Chaat Masala, for garnish

Method

  1. Heat the oil in a skillet over medium heat
  2. When hot, add the mustard seeds, cumin seeds, and fenugreek seeds, and cook until fragrant, 1 minute
  3. Add the pumpkin and mix well
  4. Cover and cook for 10 minutes
  5. Add the ground coriander, garam masala, salt, turmeric, cayenne, sugar and dry mango powder
  6. Mix well
  7. Reduce heat to medium-low, cover and cook until the pumpkin is tender, 20 to 25 minutes
  8. Stir once halfway through
  9. Add a splash of water if the pumpkin starts to stick the pan
  10. Garnish with chaat masala and serve
  11. Set aside until cool enough to handle, then peel and chop
  12. Add the roasted squash at Step 3 and cook for 5 to 10 minutes until tender
  13. The flavors infuse much better if the squash is cooked with the spices
