Ingredients

- ½ cup (50 g) sliced celery
- 1 cup (160 g) chopped onion
- parsnip, diced
- 1 pound (455 g) split peas, washed with stones removed
- 2 tbsps (28 ml) olive oil
- 1 tsp thyme
- 950 ml low-salt vegetable broth
- 4 950 ml water
- ½ teaspoon pepper
- 2 tsps chopped fresh parsley
Method
- Combine all ingredients in slow cooker
- Cover and cook on high 7 hours
- Yield: 6 servings
