Beef And Potato Casserole Slow Cooker

Ingredients

  • 1 pound (455 g) lean ground beef
  • 1 cup (160 g) chopped onion
  • 1 cup (245 g) no-salt-added tomato sauce
  • 340g frozen corn
  • 1½ cups (90 g) potato flakes
  • 1½ cups (345 g) fat-free sour cream
  • 1/3 cup (80 ml) water
  • 1½ cups (173 g) grated Cheddar cheese

Method

  1. Brown beef and onion in a skillet over medium-high heat
  2. Drain well
  3. Place in slow cooker and add tomato sauce and corn and mix well
  4. In bowl, mix potato flakes with sour cream and water
  5. Spread mixture over beef
  6. Top with grated cheese
  7. Cover and cook on low for 7 to 10 hours
  8. Yield: 4 servings
  9. Per serving: 335 g water; 772 calories (54% from fat, 21% from protein, 24% from carb)
