Spiced Pineapple Guava Applesauce Pressure Cooker Recipe

Ingredients

Makes 4 cups – Cooker: 5- to 7-quart – Time: 1 minute at HIGH pressure

  • 2 pounds apples (4 to 5 large apples), peeled, cored, and cut into wedges or chunks
  • 2 dozen pineapple guavas, cut in half and fruit scooped out with a teaspoon
  • 1/3 cup sugar
  • 2/3 cup water
  • 2 cinnamon sticks
  • 3 green cardamom pods, crushed
  • ½ vanilla bean, split

Method

  1. In a 5- to 7-quart pressure cooker, combine the ingredients
  2. Close and lock the lid
  3. Set the burner heat to high
  4. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  5. Set a timer to cook for 1 minute
  6. Remove the pot from the heat
  7. Open the cooker with the Natural Release method; let stand for 15 minutes
  8. Be careful of the steam as you remove the lid
  9. Remove the spices and discard
  10. Use a potato masher, wooden spoon, or immersion blender to crush or puree the sauce to the consistency you prefer
  11. Use immediately or let cool completely and store in an airtight container in the refrigerator up to 5 days or in the freezer up to 1 month
