Ingredients
- 2 tbsps (28 ml) olive oil
- 1 pound (900 g) beef round steak, cubed
- 1 cup (160 g) diced onion
- ½ teaspoon minced garlic
- 1½ cups (355 ml) water
- 1 tbsp (1.3 g) parsley
- 1 tsp cumin
- ½ cup (65 g) sliced carrots
- 1 can (14 ounces, or 400 g) no-salt-added diced tomatoes
- 1 pound (455 g) frozen green beans
- 1 pound (455 g) frozen corn
- 115g diced green chilies
- 240 g diced zucchini
Method
- Heat oil in a large skillet over medium-high heat
- Brown meat, onion, and garlic until meat is no longer pink
- Place in slow cooker
- Stir in remaining ingredients
- Cover and cook on high 30 minutes
- Reduce heat to low and cook 4 to 6 hours
- Yield: 6 servings
- Per serving: 605 g water; 350 calories (25% from fat, 44% from protein, 31% from carb)
