Southwestern Keto Potato Salad Recipe

Ingredients

  • 1/2 head cauliflower
  • 1/2 cup (120 g) mayonnaise
  • 2 tablespoons (30 ml) spicy mustard
  • 1 tablespoon (15 ml) lime juice
  • 1 small jalapeno
  • 1/2 cup (30 g) chopped cilantro
  • 1 clove garlic, crushed
  • 1/2 cup (40 g) diced red onion
  • 1 small tomato

Method

  1. First, cut your cauliflower into 1/2-inch 1 3-cm chunks-don’t bother coring it first, just trim the bottom of the stem and cut up the core with the rest of it
  2. Put your cauliflower chunks in a microwavable casserole dish with a lid, add a few tablespoons of water, and cook it on high for 7 minutes
  3. When your cauliflower is done, drain it and put it in a large mixing bowl
  4. In a medium-size bowl, whisk together the mayo, mustard, and lime juice; then pour it over the cauliflower and mix well
  5. Cut the jalapeno in half, remove the seeds, and mince it fine
  6. Add it to the salad along with the cilantro, garlic, and diced red onion (don’t forget to wash your hands!); mix again
  7. Finally, cut the stem out of the tomato and cut the tomato into smallish dice
  8. Then carefully stir it in
  9. Chill the salad for a few hours before serving

Makes 6 servings

  1. Each serving will have 3 grams of carbohydrate and 1 gram of fiber, for a usable carb count of 2 grams; 1 gram protein
