So Simple Banana Bread Slow Cooker Recipe

Ingredients

  • 2 bananas, mashed
  • ½ cup (112 g) unsalted butter, softened
  • ½ cup (120 ml) egg substitute
  • 1 tsp vanilla
  • 1 cup (200 g) sugar
  • 1 cup (125 g) flour
  • 1 tsp baking soda

Method

  1. Combine all ingredients in a mixing bowl
  2. Beat with an electric mixer for 2 minutes
  3. Pour into a 2-pound (900 g) coffee can sprayed with nonstick baking spray (one that contains flour)
  4. Cover with foil and place in slow cooker
  5. Cover and cook on high for 2 to 2½ hours
  6. Cool before removing from can
  7. Yield: 8 servings
  8. Per serving: 39 g water; 296 calories (37% from fat, 5% from protein, 58% from carb)
