Ingredients
- 1 cup (160 g) finely chopped onion
- ½ cup (65 g) finely chopped carrots
- ½ teaspoon chopped garlic
- 2 tbsps (28 ml) olive oil
- 2 cans 28 ounces, or 785g no-salt-added crushed tomatoes
- 1 tablespoon 15g brown sugar
Method
- In a skillet, saute onion, carrots, and garlic in oil until tender
- Do not brown
- Combine onion mixture, tomatoes, and brown sugar in slow cooker
- Stir well
- Cover and cook on low 6 to 10 hours
- Remove cover
- Stir well
- Cook on high uncovered for 1 hour for a thicker marinara sauce
- Yield: 12 servings
- Per serving: 141 g water; 54 calories (37% from fat, 8% from protein, 55% from carb)
