Ingredients
- 3 tbsps (45 ml) dark rum, divided
- ¼ cup (35 g) raisins
- 3 tbsps (42 g) unsalted butter
- ¼ cup (60 g) brown sugar
- 2 bananas
- ¼ teaspoon nutmeg
- ¼ teaspoon cinnamon
Method
- Pour 2 tablespoons (30 ml) of the rum over the raisins in a bowl and set aside
- Place the butter, brown sugar, and remaining 1 tablespoon (15 ml) rum in the slow cooker
- Turn to high and cook until butter and sugar have melted
- Peel the bananas and cut in half lengthwise
- Place in the cooker
- Cover and cook for 30 minutes, turning halfway through the time
- Pour the reserved rum and raisins over the bananas and cook 10 minutes longer
- Combine nutmeg and cinnamon and sprinkle over bananas before serving
- Yield: 4 servings
- Per serving: 95 g water; 284 calories (29% from fat, 2% from protein, 68% from carb)
