Rum Raisin Bananas Slow Cooker Recipe

Ingredients

  • 3 tbsps (45 ml) dark rum, divided
  • ¼ cup (35 g) raisins
  • 3 tbsps (42 g) unsalted butter
  • ¼ cup (60 g) brown sugar
  • 2 bananas
  • ¼ teaspoon nutmeg
  • ¼ teaspoon cinnamon

Method

  1. Pour 2 tablespoons (30 ml) of the rum over the raisins in a bowl and set aside
  2. Place the butter, brown sugar, and remaining 1 tablespoon (15 ml) rum in the slow cooker
  3. Turn to high and cook until butter and sugar have melted
  4. Peel the bananas and cut in half lengthwise
  5. Place in the cooker
  6. Cover and cook for 30 minutes, turning halfway through the time
  7. Pour the reserved rum and raisins over the bananas and cook 10 minutes longer
  8. Combine nutmeg and cinnamon and sprinkle over bananas before serving
  9. Yield: 4 servings
  10. Per serving: 95 g water; 284 calories (29% from fat, 2% from protein, 68% from carb)
