Ingredients
- 3 packages (10 ounces each) frozen sweetened raspberries, thawed and drained, juice reserved
- 1/4 cup sugar
- 1 tablespoon lemon juice
Method
- In a large saucepan, bring raspberry juice to a boil
- Reduce heat and simmer for 15 minutes, until reduced to about ¾ cup
- In a blender, puree raspberry, and strain to remove seeds
- In a medium bowl, combine pureed raspberries, raspberry juice, sugar and lemon juice
- Cover and chill for 2 hours
