Angel Hair Pasta with Olive Oil Garlic

Angel Hair Pasta With Olive Oil Garlic

Ingredients

Makes 4 servings

  • 1/2 cup olive oil
  • 4 garlic cloves, finely minced
  • salt and freshly ground black pepper
  • 1 pound angel hair pasta

Method

  1. Put a large pot of salted water on to boil for the pasta
  2. In a medium skillet, heat the oil over low heat
  3. Add the garlic and about 1/2 teaspoon of salt and cook, stirring frequently, until the garlic is fragrant and softened, about 2 minutes
  4. Be careful not brown the garlic
  5. Add 1 cup of the hot pasta water and simmer over medium heat until the liquid reduces a bit
  6. Keep warm over very low heat
  7. Add the pasta to the boiling salted water and cook over medium-high heat, stirring occasionally, until al dente, 3 to 4 minutes
  8. Drain well and transfer to a large serving bowl
  9. Add the sauce, season with salt to taste and several grindings of fresh black pepper
  10. Toss gently to combine and serve immediately
