Pumpkin Bread With Cranberries Recipe
Ingredients
Makes 1 loaf
- 2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- ¾ teaspoon salt
- 1 cup canned solid-pack pumpkin
- 1 cup light brown sugar
- 1/3 cup canola oil
- 1/3 cup plus 2 tablespoons soy milk
- 1 teaspoon pure vanilla extract
- 1 teaspoon cinnamon
- 1/4 teaspoon ground allspice
- 1/4 teaspoon powdered ginger
- 1/4 teaspoon ground nutmeg
- 2/3 cup sweetened dried cranberries
Method
- Preheat the oven to 350°F
- Lightly oil a 9-inch loaf pan and set aside
- In a large bowl, combine the flour, baking powder, baking soda and salt
- Set aside
- In a separate bowl, combine the pumpkin, sugar, oil, soy milk, vanilla, cinnamon, allspice, ginger and nutmeg
- Mix the wet ingredients into the dry ingredients
- Fold in the cranberries and mix until just combined
- Transfer the batter to the prepared pan
- Bake until a toothpick inserted in the center comes out clean, about 1 hour
- Cool on a wire rack before slicing
