Potatoes Au Gratin Slow Cooker
Ingredients
- 2 tbsps (20 g) minced onion
- ½ teaspoon minced garlic
- 2 medium potatoes, sliced
- 225g fat-free cream cheese, cubed, divided
- ½ cup (58 g) shredded Cheddar cheese
Method
- Spray interior of slow cooker with nonstick cooking spray
- In a small bowl, combine onion and garlic
- Layer about one-fourth of the potatoes into the slow cooker
- Sprinkle one-fourth of onion-garlic mixture over potatoes
- Spoon about one-third of cream cheese cubes over top
- Repeat layers, ending with the onion-garlic mixture
- Cook on high 3 to 4 hours or until potatoes are tender
- Stir potatoes to distribute the cream cheese
- Sprinkle shredded cheese over top of the sliced potatoes
- Cover and cook an additional 10 minutes or until the cheese is melted
- Yield: 8 servings
- Per serving: 322 g water; 358 calories (20% from fat, 13% from protein, 67% from carb)
