Ingredients
Makes 4 to 6 servings
- 1 cup water
- 3 tablespoons vegan margarine
- 2 pounds sweet potatoes, peeled and shredded
- 1 large Granny Smith apple, peeled, cored and shredded
- 1 1/2 tablespoons light brown sugar
- 1 teaspoon ground allspice
- 1 teaspoon ground cinnamon
- 1/2 teaspoon salt
- 1/4 teaspoon freshly ground black pepper
- 2 tablespoons coarsely ground pecans or other nuts
Method
- Preheat the oven to 375°F
- Lightly oil a large gratin dish or 10-inch square baking pan and set aside
- In a large saucepan, bring the water to a boil over high heat
- Add 2 tablespoons of the margarine, stirring to melt
- Add the sweet potatoes, apple, sugar, allspice, cinnamon, salt and pepper
- Mix thoroughly, then spoon the mixture into the prepared gratin dish
- Dot with the remaining 1 tablespoon margarine
- Bake until firm and crisp around the edges, 50 to60 minutes
- During the last 10 minute of baking, sprinkle with the pecans
- Serve immediately
