Sweet Potato Apple Gratin Recipe

Ingredients

Makes 4 to 6 servings

  • 1 cup water
  • 3 tablespoons vegan margarine
  • 2 pounds sweet potatoes, peeled and shredded
  • 1 large Granny Smith apple, peeled, cored and shredded
  • 1 1/2 tablespoons light brown sugar
  • 1 teaspoon ground allspice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper
  • 2 tablespoons coarsely ground pecans or other nuts

Method

  1. Preheat the oven to 375°F
  2. Lightly oil a large gratin dish or 10-inch square baking pan and set aside
  3. In a large saucepan, bring the water to a boil over high heat
  4. Add 2 tablespoons of the margarine, stirring to melt
  5. Add the sweet potatoes, apple, sugar, allspice, cinnamon, salt and pepper
  6. Mix thoroughly, then spoon the mixture into the prepared gratin dish
  7. Dot with the remaining 1 tablespoon margarine
  8. Bake until firm and crisp around the edges, 50 to60 minutes
  9. During the last 10 minute of baking, sprinkle with the pecans
  10. Serve immediately
