Ingredients
- 1 1/2 pounds pollock fillets — thawed if necessary
- 1 cup onion — chopped
- 1/2 cup celery — sliced
- 1 clove garlic — minced
- 1 tablespoon oil
- 2 14 1/2-ounce cans tomatoes (14 1/2 to 16-ounce cans)
- 3/4 cup water
- 1/4 cup dry white wine
OR:
- 1/4 cup water
- 1/2 teaspoon oregano — crushed
- 1/2 teaspoon salt
- 1/8 teaspoon pepper
- dash bottled hot pepper sauce.
Method
- Cut pollock into large chunks
- Saute onion, celery and garlic in oil
- Add tomatoes including liquid, water, wine and seasonings
- Bring to boil; simmer 10 minutes
- Add pollock; simmer, covered, about 10 minutes or until fish flakes when tested with a fork
