Penne With Vodka Tomato Sauce Recipe

Ingredients

Makes 4 servings

  • 1 tablespoon olive oil
  • 1 medium yellow onion, chopped
  • 1/4 cup vodka
  • 1 (28-ounce) can crushed tomatoes
  • 1 tablespoon minced fresh marjoram or 1 teaspoon dried
  • 1/2 teaspoon salt
  • 1/2 cup cooked or canned white beans, drained and rinsed
  • 1/2 cup plain unsweetened soy milk
  • 1 pound penne

Method

  1. In a large saucepan, heat the oil over medium heat
  2. Add the onion, cover and cook until soft, about7 minutes
  3. Add the vodka and simmer for a minute to let the alcohol burn off
  4. Stir in the tomatoes, marjoram and salt and simmer over low heat for 10 minutes
  5. Puree the beans and soy milk in a blender or food processor until smooth
  6. Add 1 cup of the tomato sauce and blend until smooth and creamy
  7. Add the bean mixture to the tomato sauce in the saucepan and stir to blend
  8. Taste, adjusting seasonings if necessary and keep warm over low heat while you cook the pasta
  9. In a large pot of boiling salted water, cook the penne over medium-high heat, stirring occasionally, until al dente, about 10 minutes
  10. Drain well and transfer to a large serving bowl
  11. Add the sauce, toss gently to combine and serve immediately
