Ingredients
Makes 4 servings
- 1 tablespoon olive oil
- 1 medium yellow onion, chopped
- 1/4 cup vodka
- 1 (28-ounce) can crushed tomatoes
- 1 tablespoon minced fresh marjoram or 1 teaspoon dried
- 1/2 teaspoon salt
- 1/2 cup cooked or canned white beans, drained and rinsed
- 1/2 cup plain unsweetened soy milk
- 1 pound penne
Method
- In a large saucepan, heat the oil over medium heat
- Add the onion, cover and cook until soft, about7 minutes
- Add the vodka and simmer for a minute to let the alcohol burn off
- Stir in the tomatoes, marjoram and salt and simmer over low heat for 10 minutes
- Puree the beans and soy milk in a blender or food processor until smooth
- Add 1 cup of the tomato sauce and blend until smooth and creamy
- Add the bean mixture to the tomato sauce in the saucepan and stir to blend
- Taste, adjusting seasonings if necessary and keep warm over low heat while you cook the pasta
- In a large pot of boiling salted water, cook the penne over medium-high heat, stirring occasionally, until al dente, about 10 minutes
- Drain well and transfer to a large serving bowl
- Add the sauce, toss gently to combine and serve immediately
