Ingredients
Makes : 6 dozen
- 1/2 cup maple syrup
- 3/4 cup brown rice syrup
- 2/3 cup coconut oil
- 1 teaspoon vanilla extract
- 1 cup cashews, coarsely chopped
- 2 cups barley flour
- 2 cups oat flour
- 2 tablespoons orange zest
- 1 teaspoon cinnamon
- 1 teaspoon baking soda
- 1 pinch of salt
Method
- In a bowl, mix together the maple syrup with brown rice syrup, coconut oil and vanilla extract
- Add the chopped cashews then stir in the flours, orange zest, cinnamon, baking soda and a pinch of salt
- Mix well then form small dough balls
- Arrange all of them on a baking tray lined with parchment paper
- Bake the cookies in a preheated oven at 350F for 15-20 minutes
- Store them in an airtight container until serving
