Oat Bran Bread Slow Cooker Recipe

Ingredients

  • 250 g flour
  • 1/3 cup (67 g) sugar
  • 1 tsp baking soda
  • 1½ cups (120 g) rolled oats
  • 1 cup (90 g) bran cereal, such as Kellogg’s All-Bran
  • ½ cup (75 g) raisins
  • ½ cup (120 ml) egg substitute
  • 1½ cups (355 ml) buttermilk
  • ½ cup (170 g) molasses

Method

  1. Mix flour, sugar, baking soda, oats, bran cereal, and raisins in mixing bowl
  2. Add egg substitute, buttermilk, and molasses and mix well
  3. Divide into two 1-pound (445 g) coffee cans, a 2-quart (2 lt) mold, or a 2-pound 900 g can sprayed with nonstick baking spray one that contains flour
  4. Set in cooker and cover with 2 to 3 paper towels
  5. With cover slightly ajar, cook on high 3 hours or until done
  6. Let bread stand in can 10 minutes and then turn out on rack to cool
  7. Yield: 12 servings
  8. Per serving: 44 g water; 232 calories (7% from fat, 11% from protein, 82% from carb)
