Molasses Rice Pudding Recipe

Ingredients

  • Serving Size : 4
  • 4 egg whites – beaten
  • 1 1/2 cups skim milk
  • 1 1/4 cups brown rice, cooked – cooked
  • 1 cup raisins
  • 1/4 cup molasses
  • 1 teaspoon salt
  • 1 teaspoon vanilla
  • 1/4 teaspoon cinnamon
  • 1/2 teaspoon nutmeg

Method

  1. Preheat oven to 350 degrees.
  2. In a medium bowl, add milk and egg whites and mix well.
  3. Add all the other ingredients, mix well.
  4. Place in a medium baking dish.
  5. Cover and bake for 1 hour or until the mixture is firm.
  6. Serve warm or chilled, topped with whipped cream if desired.
