Ingredients
- 1.5 lbs. boneless skinless chicken thighs
- 1/2 yellow onion, thinly sliced
- 2 cloves garlic, minced
- 1 14-oz. can whole tomatoes, drained and sliced
- 8 oz. sliced mushrooms
- 8 oz. marinated artichoke hearts,
- drained
- 4 oz. sundried tomatoes, drained and sliced
- 3/4 lb. green beans
- 2 Tbsps. capers
- juice of 1/2 large lemon + the remainder for serving
- 1/4 cup white wine
- pinch red pepper flakes.
- 1/4 cup chopped parsley, for serving salt and pepper, to taste
Method
- Combine the onions, garlic, mushrooms, tomatoes, artichoke, sundried tomatoes, capers, green beans and the chicken in a crock pot
- Pour the lime juice on the rest of the ingredients in the crock pot and add the pepper flakes and the wine
- Stir all ingredients in the crock pot together, cover with lid and cook for 4 hours on high or 8 hours on low
- Adjust seasonings as required
- Transfer the ingredients from the crock pot onto a platter
- Serve garnished with parsley
