Ingredients
CRUST:
- 1/2 cup whole blanched almonds, toasted and finely chopped
- 1 cup graham crackers crumbs
- 3 tablespoons sugar
- 1/3 cup unsalted butter
- 1/3 cup packed pure almond paste
- 3/4 cup sugar
- 3 8-ounce packages cream cheese, softened
- 1 teaspoon vanilla
- 5 large eggs
GANACHE:
- 3/4 cup semisweet chocolate
- 1/2 cup heavy cream
Method
- Preheat oven to 325F
- In a medium bowl, combine graham cracker crumbs, almonds, sugar and butter
- Press into the bottom and 1 inch up the sides of a greased 9 inch springform pan
- In a food processor, grind almond paste with sugar
- Add cream cheese and vanilla and blend well
- Add eggs, one at a time, pulsing after each addition
- Pour into crust
- Bake for 50 minutes, until almost set
- Let cool in unheated oven for 10 minutes
- Cool, cover and chill overnight
- Melt chocolate with cream in a small saucepan until smooth
- Cool slightly and pour over cake
- Chill for 2 hours
- Garnish suggestion – chocolate shavings
