Marzipan Cheesecake Recipe

Ingredients

CRUST:

  • 1/2 cup whole blanched almonds, toasted and finely chopped
  • 1 cup graham crackers crumbs
  • 3 tablespoons sugar
  • 1/3 cup unsalted butter
  • 1/3 cup packed pure almond paste
  • 3/4 cup sugar
  • 3 8-ounce packages cream cheese, softened
  • 1 teaspoon vanilla
  • 5 large eggs

GANACHE:

  • 3/4 cup semisweet chocolate
  • 1/2 cup heavy cream

Method

  1. Preheat oven to 325F
  2. In a medium bowl, combine graham cracker crumbs, almonds, sugar and butter
  3. Press into the bottom and 1 inch up the sides of a greased 9 inch springform pan
  4. In a food processor, grind almond paste with sugar
  5. Add cream cheese and vanilla and blend well
  6. Add eggs, one at a time, pulsing after each addition
  7. Pour into crust
  8. Bake for 50 minutes, until almost set
  9. Let cool in unheated oven for 10 minutes
  10. Cool, cover and chill overnight
  11. Melt chocolate with cream in a small saucepan until smooth
  12. Cool slightly and pour over cake
  13. Chill for 2 hours
  14. Garnish suggestion – chocolate shavings
