Madeira Poached Fresh Cherries With Honeyed Mascarpone Pressure Cooker Recipe
Ingredients
SERVES 4 – Cooker: 5- to 7-quart – Time: 3 minutes at HIGH pressure
- 2¼ cups Madeira wine
- ¾ cup water
- ¾ cup sugar
- 2 (3-inch) strips orange zest
- 1 tablespoon orange juice
- 2 pounds sweet cherries (about 5 cups), stemmed
- 1 cup mascarpone cheese
- 2 tablespoons honey
Method
- In a 5- to 7-quart pressure cooker, combine the wine, water, sugar, and orange zest and juice
- Bring to a boil over medium-high heat, stirring until the sugar has dissolved, about 1 minute
- Add the cherries
- Close and lock the lid
- Set the burner heat to high
- When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
- Set a timer to cook for 3 minutes
- Remove the pot from the burner
- Open the cooker with the Natural Release method; let stand for 15 minutes
- Be careful of the steam as you remove the lid
- The cherries should be tender
- Transfer them with a slotted spoon to a glass or ceramic bowl
- Pour the liquid over the cherries
- Let cool at least 10 minutes
- Cover and refrigerate at least 30 minutes
- In a small bowl, combine the mascarpone with the honey
- Cover and chill until serving
- Serve the cherries and syrup in bowls or stemmed glasses, topped with a large dollop of the mascarpone
- Madeira-Poached Fresh Plums with Honeyed Mascarpone: Substitute 1½ pounds (about 10) fresh small to medium red plums, such as Santa Rosa, for the cherries
- Cook them whole with their skins on
- Cook time is the same
