Madeira Poached Fresh Cherries With Honeyed Mascarpone Pressure Cooker Recipe

Ingredients

SERVES 4 – Cooker: 5- to 7-quart – Time: 3 minutes at HIGH pressure

  • 2¼ cups Madeira wine
  • ¾ cup water
  • ¾ cup sugar
  • 2 (3-inch) strips orange zest
  • 1 tablespoon orange juice
  • 2 pounds sweet cherries (about 5 cups), stemmed
  • 1 cup mascarpone cheese
  • 2 tablespoons honey

Method

  1. In a 5- to 7-quart pressure cooker, combine the wine, water, sugar, and orange zest and juice
  2. Bring to a boil over medium-high heat, stirring until the sugar has dissolved, about 1 minute
  3. Add the cherries
  4. Close and lock the lid
  5. Set the burner heat to high
  6. When the cooker reaches HIGH pressure, reduce the burner heat as low as you can and still maintain HIGH pressure
  7. Set a timer to cook for 3 minutes
  8. Remove the pot from the burner
  9. Open the cooker with the Natural Release method; let stand for 15 minutes
  10. Be careful of the steam as you remove the lid
  11. The cherries should be tender
  12. Transfer them with a slotted spoon to a glass or ceramic bowl
  13. Pour the liquid over the cherries
  14. Let cool at least 10 minutes
  15. Cover and refrigerate at least 30 minutes
  16. In a small bowl, combine the mascarpone with the honey
  17. Cover and chill until serving
  18. Serve the cherries and syrup in bowls or stemmed glasses, topped with a large dollop of the mascarpone
  19. Madeira-Poached Fresh Plums with Honeyed Mascarpone: Substitute 1½ pounds (about 10) fresh small to medium red plums, such as Santa Rosa, for the cherries
  20. Cook them whole with their skins on
  21. Cook time is the same
