Ingredients

  • 1 1/2 cups yellow cornmeal, preferably stone-ground
  • 1 1/4 cups boiling water
  • 1 tablespoon olive oil
  • 2 packages active dry yeast
  • 2 cups all-purpose flour

Method

  1. In a blender or food processor, grind cornmeal, in 1/4-cup batches, until fine and powdery.
  2. In a large mixing bowl, combine 1 cup ground cornmeal, boiling water, oil and salt; stir until smooth.

  10. Lightly oil a baking sheet or coat it with nonstick spray.
  11. Form dough into a ball and flatten slightly.
  12. Place on prepared baking sheet.
  13. Loosely cover with plastic wrap or wax paper and let rise until doubled in bulk, 30 to 45 minutes.
