Low Fat Southwestern Chicken Recipe
Ingredients
nonstick cooking spray
1/2 cup wheat germ
1 teaspoon chili powder
1 teaspoon ground cumin
1 teaspoon dried minced onion
1/4 teaspoon garlic powder
1/4 teaspoon salt, optional
1/8 teaspoon cayenne pepper
1 egg white
2 skinless boneless chicken breast halves
salsa, optional
Method
Preheat oven to 400°F.
Lightly spray baking sheet with cooking spray.
In shallow dish, combine wheat germ, chili powder, cumin, minced onion, garlic powder, salt and cayenne pepper.
In separate dish, combine egg white and 1 tablespoon water; beat until frothy.
Dip chicken into egg white mixture.
Dip again into both mixtures to coat thoroughly.
Place chicken on prepared baking sheet.
Bake 20 to 25 minutes, until juices run clear when pierced with fork.
Serve with salsa.
Makes 2 servings.
Preparation time: 15 minutes.
Baking time: 20 minutes.
