Low Fat Mango Mayonnaise And Shrimp Recipe

Ingredients

  • 1/2 cup reduced-fat mayonnaise, or light mayonnaise
  • 1/2 cup mango puree, fresh or thawed frozen
  • 1/4 cup light sour cream
  • 1/4 teaspoon salt
  • 1/8 teaspoon pepper
  • 2 tablespoons lime juice
  • 8 ounces medium shrimp, cooked, shelled and deveined
  • 20 melba rounds or toasts
  • Method

  • In small bowl, combine mayonnaise, mango puree, sour cream, salt, pepper and lime juice.
  • Spoon mayonnaise mixture onto melba rounds; top with a shrimp.
  • Makes 20 servings.
  • Preparation time: About 10 minutes.
