Lemon-Parsley Carrots Recipe

Ingredients

  • Serving Size : 4
  • 1 pound carrots – sliced
  • 1 tablespoon chopped parsley
  • 1 teaspoon grated lemon peel
  • 1 tablespoon fresh lemon juice
  • 1 tablespoon sugar
  • 1 dash salt
  • 2 tablespoons butter or margarine

Method

  1. Scrape, then slice carrots.
  2. Cook in a small amount of salted water until just tender, drain.
  3. Meanwhile, combine remaining ingredients in a small skillet, bring to a boil.
  4. Pour over hot, cooked carrots and mix lightly.
