Ingredients

  • 3 bell peppers, halved, seeds removed
  • 3 eggs, whisked
  • 1 cup Mexican cheese blend
  • 1 teaspoon chili powder
  • 1 garlic clove, minced
  • 1 teaspoon onion powder
  • 1 ripe tomato, pureed
  • 1 teaspoon mustard powder

Method

  1. Start by preheating your oven to 370 degrees F.
  2. Spritz the bottom and sides of a baking pan with a cooking oil.
  3. In a mixing bowl, thoroughly combine the eggs, cheese, chili powder, garlic, and onion powder.
  4. Divide the filling between the bell peppers.
  5. Mix the tomatoes with mustard powder and transfer the mixture to the baking pan.
  6. Cover with foil and bake for 40 minutes, until the peppers are tender and the filling is thoroughly heated.
