Keto Johnny Cakes Recipe

Ingredients

Makes : 10-12 cakes, 3-4 servings

  • 2 tablespoons bacon grease
  • 1/3 cup pork rind crumbs
  • 3 tablespoons grated Parmesan cheese
  • 2 tablespoons natural Unflavored Whey protein isolate
  • 1 teaspoon whole psyllium husks
  • 1/2 teaspoon aluminum & gluten free baking powder
  • 1 pinch kosher salt
  • 2 tablespoons sour cream
  • 1 large egg-or 3 tablespoons carton egg whites
  • 3 tablespoons eggs whites
  • 1/8 teaspoon Amoretti Popcorn Extract(optional)
  • 1 teaspoon apple cider vinegar
  • 1-2 drops concentrated stevia drops (optional)

Method

  1. Mix dry ingredients in a bowl
  2. Stir to combine
  3. In a separate bowl, combine wet ingredients and stir until evenly mixed
  4. Add wet to dry ingredients and stir with a spatula until batter is smooth
  5. Heat a nonstick skillet over medium heat
  6. Brush pan with melted bacon grease or lard
  7. Drop by rounded spoonful (we use a tablespoon from the silverware drawer) onto hot skillet
  8. Cook for 1 minute then flip
  9. Cook on the second side until golden brown
  10. Remove and top with extra butter
  11. Serve immediately
  12. Repeat with the rest of the batter
