Ingredients
- 2 tablespoons (30 ml) olive oil
- 1/4 cup (40 g) diced green pepper
- 1/4 cup (40 g) chopped onion
- 1 clove garlic, crushed
- 3 eggs
- 1 tablespoon (6.3 g) grated Parmesan cheese
Method
- Heat the olive oil in a heavy skillet over medium heat and saute the pepper, onion, and garlic for 5 to 7 minutes or until the onion is translucent
- Beat the eggs with the Parmesan and pour into the skillet
- Scramble until the eggs are set and serve
Makes 1 serving grams of carbohydrates and 1 gram of fiber, for a total of 7 grams of usable carbs and 17 grams of protein
