Keto Easy Greek Salad Recipe

Ingredients

Yield: 2 servings

  • 3 lightly packed cups (90g) fresh baby spinach
  • ½ cup (50g) sliced cucumbers
  • ¼ cup (30g) halved cherry tomatoes
  • 2 ounces (56g) pitted Kalamata olives
  • ¼ cup (30g) raw or roasted sunflower seeds
  • ¼ cup (60 ml) Greek Dressing (see Greek Dressing)

Method

  1. Divide the spinach, cucumbers, tomatoes, and olives between 2 bowls and top each salad with half of the sunflower seeds and dressing
  2. Refrigerate without dressing for up to 3 days
