Keto Cucumber Salad Recipe

Ingredients

Yield: 4 servings

  • 2 large cucumbers, thinly sliced
  • 1 teaspoon salt
  • ½ cup (120 ml) Quick Hemp Seed Sour Cream (see Quick Hemp Seed Sour Cream)
  • ½ cup (10g) chopped fresh dill leaves
  • ¼ teaspoon cracked black pepper
  • paprika, for sprinkling

Method

  1. In a large mixing bowl, toss the cucumber slices with the salt
  2. Let sit in the refrigerator for 30 minutes
  3. The cucumbers will release some of their liquid
  4. After 30 minutes, pour the excess liquid out of the bowl and place the cucumber slices in the center of a clean dish towel
  5. Using the towel, squeeze out the excess moisture from the cucumbers-they should look darker green and somewhat translucent
  6. Return the cucumber slices to the empty mixing bowl and stir in the sour cream, dill, and pepper
  7. Mix until everything is evenly distributed
  8. Cover and place in the refrigerator to chill for 1 hour to let the flavors combine
  9. To serve, divide the salad among 4 plates and sprinkle a pinch of paprika over each serving
  10. Refrigerate in a tightly sealed container for up to 2 days
