Keto Balsamic Veggie Packet Recipe

Ingredients

  • 2 medium turnips, peeled and cut into strips
  • 1/2 medium onion, sliced
  • 1 medium yellow summer squash, halved lengthwise and sliced (You can substitute zucchini, if you prefer.)
  • 1 cup (70 g) broccoli florets
  • 1/4 cup (60 ml) olive oil
  • 1 clove garlic, crushed
  • 2 tablespoons (30 ml) balsamic vinegar
  • salt and pepper

Method

  1. Start a charcoal fire or preheat a gas grill
  2. You’ll need a big piece of heavy-duty foil
  3. When you’ve got your vegetables cut up, heap them in the center of a piece of foil, jumbling them together
  4. Mix the oil, garlic, and balsamic vinegar together
  5. Make sure that the edges of the foil are turned up a bit and drizzle this mixture over the vegetables
  6. Sprinkle salt and pepper over the whole thing
  7. Then bring the opposite sides of the foil together and roll down to make a strong seam
  8. Roll up the ends
  9. Throw the whole thing on a medium grill for 12 minutes per side and then serve

Makes 5 to 6 servings

  1. Assuming 5, each will have 7 grams of carbohydrate and 2 grams of fiber, for a usable carb count of 5 grams; 1 gram protein
