Italian Sausage Kale Soup Slow Cooker Recipe

Active Time 10 minutes

Saute; Pressure/Manual (High) Natural/Quick Release

  • 1 pound bulk hot Italian sausage meat
  • 1 cup diced yellow onions
  • 6 garlic cloves, minced
  • 2 cups diced potatoes
  • 1 (12-ounce) package frozen kale
  • 3 cups water
  • ½ cup heavy cream
  • ½ cup shredded Parmesan cheese

Method

  1. Select SAUTE on the Instant Pot
  2. When the pot is hot, add the sausage
  3. Cook, stirring to break up the clumps, until it is the texture of ground beef, 3 to 4 minutes
  4. Add the onions and garlic and stir well to combine
  5. Add the potatoes and kale and stir well to combine
  6. Stir in the water
  7. Select CANCEL
  8. Secure the lid on the pot
  9. Close the pressure-release valve
  10. Select MANUAL and set the pot at HIGH pressure for 6 minutes
  11. At the end of the cooking time, allow the pot to sit undisturbed for 5 minutes, then release any remaining pressure
  12. Add the cream and stir well to combine
  13. Divide among four bowls
  14. Top with the Parmesan and serve
