Italian Bean Soup Slow Cooker Recipe

Ingredients

  • 1 pound (455 g) dried mixed beans
  • 1 cup (160 g) chopped onion
  • 700 ml water
  • 6 slices low-salt bacon, cooked and crumbled
  • 2 tbsps (12 g) Italian seasoning
  • 1 can (28 ounces, or 785 g) no-salt-added diced tomatoes

Method

  1. Cook beans according to package directions until almost done
  2. Drain
  3. Combine beans and remaining ingredients in slow cooker
  4. Cover and cook on low 8 to 10 hours
  5. Yield: 6 servings
  6. Per serving: 276 g water; 317 calories (9% from fat, 26% from protein, 66% from carb)
