Almond Crunch Vanilla Ice Cream

Ingredients

Servings : 2-4 dishes.

• 1/2 cup sliced almonds
• 1/2 cup brown sugar
• 2 cups coconut milk
• seeds from 1 vanilla pod.
• 4 tablespoons raw honey

Method

1. In a bowl, mix the coconut milk with sugar and vanilla seeds
2. Churn this mixture into your ice cream maker
3. In a small pan, melt the brown sugar then stir in the almonds
4. Pour the hot sugar onto baking paper in a pan and let it set and cool
5. When chilled, break into smaller pieces
6. Serve scoops of ice cream sprinkled with almond crunch
