Wild Cherry Soup Recipe

Ingredients

Makes 4 servings

  • 1 1/2 pounds ripe cherries, pitted
  • 2 cups white grape juice or cranberry juice
  • 1/3 cup sugar
  • 1 tablespoon fresh lemon juice
  • 1 cup vegan vanilla ice cream, softened
  • 2 tablespoons cherry liqueur

Method

  1. Chop 8 of the cherries and set aside
  2. Place the remaining cherries in a blender or food processor and process until smooth
  3. Add the grape juice, sugar, lemon juice and 1/2 cup of the ice cream and process until smooth
  4. Pour the soup into a nonmetallic bowl
  5. Cover and refrigerate until chilled, about 3 hours
  6. In a small bowl, combine the remaining 1/2 cup ice cream and the cherry liqueur, stirring to blend well
  7. Set aside
  8. Ladle the chilled soup into bowls, garnish with a spoonful of the ice cream mixture and chopped cherries and serve
