Ingredients
Makes 4 servings
- 1 1/2 pounds ripe cherries, pitted
- 2 cups white grape juice or cranberry juice
- 1/3 cup sugar
- 1 tablespoon fresh lemon juice
- 1 cup vegan vanilla ice cream, softened
- 2 tablespoons cherry liqueur
Method
- Chop 8 of the cherries and set aside
- Place the remaining cherries in a blender or food processor and process until smooth
- Add the grape juice, sugar, lemon juice and 1/2 cup of the ice cream and process until smooth
- Pour the soup into a nonmetallic bowl
- Cover and refrigerate until chilled, about 3 hours
- In a small bowl, combine the remaining 1/2 cup ice cream and the cherry liqueur, stirring to blend well
- Set aside
- Ladle the chilled soup into bowls, garnish with a spoonful of the ice cream mixture and chopped cherries and serve
