Ingredients
- Serves: 6
- 1 1/2 cups green lentils, rinse and drained
- 3 tbsp tomato paste
- 14 oz can coconut milk
- 3 tsp curry powder
- 1 onion, diced
- 3 garlic cloves, minced
- 1 yellow pepper, diced
- 1/4 tsp pepper
- 1/2 tsp ground ginger
- 2 tsp garam masala
- 2 tsp sugar
- 2 1/2 cups water
- 2 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp cumin
- 1 1/2 tsp salt
Method
- Add olive oil, yellow pepper, garlic, and onion into the slow cooker.
- Add lentils into the slow cooker and stir well.
- Add all remaining ingredients and stir well.
- Cover and cook on low for 5 hours.
- Stir well and serve with rice.
