Healthy Lentil Curry Indian Recipe

Ingredients

  • Serves: 6
  • 1 1/2 cups green lentils, rinse and drained
  • 3 tbsp tomato paste
  • 14 oz can coconut milk
  • 3 tsp curry powder
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1 yellow pepper, diced
  • 1/4 tsp pepper
  • 1/2 tsp ground ginger
  • 2 tsp garam masala
  • 2 tsp sugar
  • 2 1/2 cups water
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp cumin
  • 1 1/2 tsp salt

Method

  1. Add olive oil, yellow pepper, garlic, and onion into the slow cooker.
  2. Add lentils into the slow cooker and stir well.
  3. Add all remaining ingredients and stir well.
  4. Cover and cook on low for 5 hours.
  5. Stir well and serve with rice.
