Gluten-Free Gulab Jamun Indian
Ingredients
- 1/4 cup oat flour
- 1/4 cup arrowroot starch or other starch
- 3 tablespoon soy milk powder
- 2 tablespoons rice flour
- 2 tablespoons almond meal or cashew meal
- 1/4 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- 2 tablespoons sweet potato puree
- 1 tablespoon almond milk
- 1 teaspoon safflower or other neutral oil
- 1 tablespoon flaxseed meal or chia seed meal
Method
- In a bowl, combine oat flour, arrowroot, soy milk powder, rice flour, almond meal, baking powder, baking soda, and salt
- Whisk well or sift
- In another bowl, combine the sweet potato puree, milk, oil, and flaxseed meal
- Mix well and set aside for 2 minutes
- Mix the wet ingredients into the dry ingredients
- Knead for 1 to 2 minutes to make a soft, smooth dough
- Add a few drops of almond milk if the dough is stiff
- Let the dough rest for 5 minutes
- Divide the dough into 16 to 20 equal parts
- Roll them into smooth balls
- Heat enough oil to deep-fry over medium heat, about 11/2 inches deep
- When the oil is moderately hot, fry the balls in batches until brown on all sides, 4 to 6 minutes.
- Drain the balls on a paper towel.
- Fry all the balls and keep aside.
- Follow step 6 onwards of Gulab Jamun to make the sugar syrup and soak the balls
