Ingredients
Makes 4 servings
- 1 pound green beans, trimmed
- 2 tablespoons olive oil
- 2 garlic cloves, minced
- 3 or 4 ripe plum tomatoes, cut into a 1/2-inch dice
- 1/3 cup nicoise or other black olives, pitted and halved
- 1 tablespoon capers
- 2 tablespoons chopped fresh parsley
- salt and freshly ground black pepper
Method
- Steam the green beans until just tender, about 7 minutes
- Run the beans under cold water and set aside
- In a large skillet, heat the oil over medium heat
- Add the garlic and cook for 30 seconds
- Add the steamed green beans, tomatoes, olives, capers and parsley
- Cook for 5 minutes to heat through and blend the flavors
- Season with salt and pepper to taste
- Serve immediately
