Green Beans Nicoise Recipe

Ingredients

Makes 4 servings

  • 1 pound green beans, trimmed
  • 2 tablespoons olive oil
  • 2 garlic cloves, minced
  • 3 or 4 ripe plum tomatoes, cut into a 1/2-inch dice
  • 1/3 cup nicoise or other black olives, pitted and halved
  • 1 tablespoon capers
  • 2 tablespoons chopped fresh parsley
  • salt and freshly ground black pepper

Method

  1. Steam the green beans until just tender, about 7 minutes
  2. Run the beans under cold water and set aside
  3. In a large skillet, heat the oil over medium heat
  4. Add the garlic and cook for 30 seconds
  5. Add the steamed green beans, tomatoes, olives, capers and parsley
  6. Cook for 5 minutes to heat through and blend the flavors
  7. Season with salt and pepper to taste
  8. Serve immediately
