Greek Bean Soup Recipe

Ingredients

  • recipe for: Soupa Fassolia Bean Soup
  • Serving Size : 6
  • 3 cups dried white beans
  • 2 onions – medium
  • 2 stalks celery (or 3)
  • 3 carrots – medium (or 4)
  • 1 tablespoon celery root – chopped
  • 1 cup oil
  • 2 tablespoons tomato paste
  • salt and pepper to taste

Method

  1. Wash the beans and soak them overnight in cold water.
  2. Rinse well.
  3. Place in a large pot and pour in enough water to cover the beans by about 1 inch.
  4. Bring to a boil.
  5. Pour off this water and replace it with fresh hot water.
  6. Chop the onions and the celery stalks, and cut the carrots into rounds.
  7. Add all the vegetables to the beans.
  8. Add the oil.
  9. Simmer for about 45 min Add the tomato paste diluted with some of the liquid from the pot.
  10. Season to taste.
  11. Boil 20 min longer.
  12. Serve hot.
