Ingredients

- 1 tablespoon olive oil
- 1 pound hot or sweet Italian sausage, casings removed
- 1 onion, chopped fine
- 1 green bell pepper, stemmed, seeded, and cut into ¾-inch pieces
- 1 (25-ounce) jar tomato sauce
- 3½ cups water
- 1 pound ziti
- 2 tablespoons chopped fresh basil
- salt and pepper
Method
- Heat oil in pressure-cooker pot over medium-high heat until shimmering
- Stir in sausage, onion, and bell pepper and cook, breaking up meat with wooden spoon, until sausage is no longer pink, about 5 minutes
- Stir in tomato sauce, water, and ziti
HIGH PRESSURE FOR 5 minutes:
- Lock pressure-cooker lid in place and bring to high pressure over medium-high heat
- As soon as pot reaches high pressure, reduce heat to medium-low and cook for 5 minutes, adjusting heat as needed to maintain high pressure
QUICK RELEASE PRESSURE:
- Remove pot from heat
- Quick release pressure, then carefully remove lid, allowing steam to escape away from you
- Before Serving:
- Bring mixture to simmer over medium-high heat and cook, stirring often, until pasta is tender, 2 to 5 minutes
- Stir in basil and season with salt and pepper to taste
- Serve
VARIATIONS
- Ziti with Chicken, Peppers, and Olives
- Omit sausage; cook onion and bell pepper until softened, about 5 minutes
- Add 2 (6- to 8-ounce) boneless, skinless trimmed chicken breasts to pot with ziti and water in step 1; cook as directed
- After releasing pressure, remove chicken, let cool slightly, then shred into bite-size pieces
- Stir in shredded chicken and 1 cup pitted and halved kalamata olives to pot with basil
