Easy Ziti With Sausage And Peppers Pressure Cooker Recipe

Ingredients

Serves: 4 TO 6

Pressure Level: HIGH

Release: QUICK

Time: 5 minutes

  • 1 tablespoon olive oil
  • 1 pound hot or sweet Italian sausage, casings removed
  • 1 onion, chopped fine
  • 1 green bell pepper, stemmed, seeded, and cut into ¾-inch pieces
  • 1 (25-ounce) jar tomato sauce
  • 3½ cups water
  • 1 pound ziti
  • 2 tablespoons chopped fresh basil
  • salt and pepper

Method

  1. Heat oil in pressure-cooker pot over medium-high heat until shimmering
  2. Stir in sausage, onion, and bell pepper and cook, breaking up meat with wooden spoon, until sausage is no longer pink, about 5 minutes
  3. Stir in tomato sauce, water, and ziti

HIGH PRESSURE FOR 5 minutes:

  1. Lock pressure-cooker lid in place and bring to high pressure over medium-high heat
  2. As soon as pot reaches high pressure, reduce heat to medium-low and cook for 5 minutes, adjusting heat as needed to maintain high pressure

QUICK RELEASE PRESSURE:

  1. Remove pot from heat
  2. Quick release pressure, then carefully remove lid, allowing steam to escape away from you
  3. Before Serving:
  4. Bring mixture to simmer over medium-high heat and cook, stirring often, until pasta is tender, 2 to 5 minutes
  5. Stir in basil and season with salt and pepper to taste
  6. Serve

VARIATIONS

  1. Ziti with Chicken, Peppers, and Olives
  2. Omit sausage; cook onion and bell pepper until softened, about 5 minutes
  3. Add 2 (6- to 8-ounce) boneless, skinless trimmed chicken breasts to pot with ziti and water in step 1; cook as directed
  4. After releasing pressure, remove chicken, let cool slightly, then shred into bite-size pieces
  5. Stir in shredded chicken and 1 cup pitted and halved kalamata olives to pot with basil
