Ingredients
- 2 leeks
- 12 large potatoes, peeled and cut into bite-size pieces
- 320 g chopped onions
- 1 cup (130 g) sliced carrot
- ½ cup (50 g) diced celery
- 320 g chopped onions
- 2 L low-salt vegetable broth
- ½ teaspoon black pepper
- 1 tbsp (1.3 g) parsley
- ¼ cup (55 g) unsalted butter
- 370 ml evaporated milk
Method
- Put all ingredients except milk in slow cooker and cook on low for 10 to 12 hours or high for 3 to 4 hours
- Stir in milk when potatoes are tender and continue cooking for about 1 hour more
- Yield: 6 servings
- Per serving: 616 g water; 474 calories (26% from fat, 13% from protein, 60% from carb)
