Easy Lemon Poppy Seed Cake
Ingredients
Servings : 4-6 dishes.
- 2 cups all purpose flour
- 3 tablespoons poppy seeds
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 2/3 cup almond milk
- 1/2 cup brown sugar
- 3 tablespoons lemon juice
- 1 tablespoon lemon zest
- 1 teaspoon vanilla extract
- 1 pinch of salt
Method
- In a bowl, mix the flour, baking powder, baking soda, salt and the poppy seeds
- In another bowl, mix together the wet ingredients: Almond milk, sugar, lemon juice, zest and vanilla extract
- Combine the two mixtures and stir well
- Pour the batter into a greased small cake pan and bake in a preheated oven at 350F for 40-50 minutes or until slightly golden brown
