Ingredients
Servings : 4-6 dishes.
- 3 cups all purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1 pinch of salt
- 10 oz crushed pineapple
- 1 cup unsweetened applesauce
- 3/4 cup soy yogurt
- 1/4 cup coconut oil
- 1 cup shredded carrots
- 1 cup fresh cranberries
Method
- In a bowl, sift together the flour, baking powder, soda and salt
- Add the sugar
- In another bowl, mix the crushed pineapple, applesauce, yogurt and oil then pour this mixture over the dry ingredients
- Mix well
- Fold in the shredded or grated carrots and the fresh cranberries
- Pour this batter into a round cake pan or a loaf pan and bake in a preheated oven at 350F for 30-40 minutes or until a skewer inserted in the center of the cake comes out clean
- Serve when cold with a generous sprinkle of powdered sugar
