Cranberry Carrot Cake Recipe

Ingredients

Servings : 4-6 dishes.

  • 3 cups all purpose flour
  • 1 cup sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1 pinch of salt
  • 10 oz crushed pineapple
  • 1 cup unsweetened applesauce
  • 3/4 cup soy yogurt
  • 1/4 cup coconut oil
  • 1 cup shredded carrots
  • 1 cup fresh cranberries

Method

  1. In a bowl, sift together the flour, baking powder, soda and salt
  2. Add the sugar
  3. In another bowl, mix the crushed pineapple, applesauce, yogurt and oil then pour this mixture over the dry ingredients
  4. Mix well
  5. Fold in the shredded or grated carrots and the fresh cranberries
  6. Pour this batter into a round cake pan or a loaf pan and bake in a preheated oven at 350F for 30-40 minutes or until a skewer inserted in the center of the cake comes out clean
  7. Serve when cold with a generous sprinkle of powdered sugar
